Yellow Lentil Caserecce with Potatoes and Arugula

Ingredients:

  • 250 g Organic Yellow Lentil Caserecce
  • 200 g Potatoes
  • 1 Glove of garlic
  • 100 g Arugula
  • Extra virgin olive oil and salt to taste

Procedure:

Clean and cut the potatoes into pieces. After being boiled in salted water, drain them and keep aside. In a frying pan, brown the garlic in extra virgin olive oil and add the potatoes. Cook the caserecce in salted water, drain al dente and sauté in a pan together with the condiment previously prepared. Add the arugula, mix well the whole and serve hot.
