Ingredients:

  • 250 g di red lentil organic sedanini
  • 180 g of aubergine
  • 2 spoons of extra virgin olive oil
  • 1 bunch of mint
  • Garlic and salt to taste

Procedure:

Clean and cut the aubergines into pieces. Clean and wash the mint. Brown the garlic in a pan with extra virgin olive oil and the aubergines cut into pieces.
In the meantime, cook the sedanini in plenty of salt water.
Once the aubergines have dried, you will get a sauce. Drain the sedanini and pour them in the pan with the aubergine ragout. Serve hot adding the mint leaves.
