Green mung or azuki beans belong to the Vigna group and are the most used for the production of sprouts, commonly known and improperly called soybean sprouts.
In the "Great Herbarium of Chinese medicine", about 2700 years BC, the mung bean sprouts were recommended for oedema, knee pain, cramps, digestive disorders and "weak" lungs.
