Ingredients:

  • 250 g Green Mung bean fusilli
  • 200 g Artichokes
  • Leek to taste
  • 100 g Pumpkin
  • Extra virgin olive oil and salt to taste

Procedure:

In a frying pan, brown the leek slices with extra virgin olive oil. Boil pumpkin and artichokes. Cut the pumpkin and artichokes into pieces and add them in the pan, stir until you get a sauce. Cook the fusilli in abundant salt water and drain them al dente. Sauté the pasta into the pan, then mix all together and serve hot.
